A long time ago, Clément Jaluzot, chef de cuisine at the Plessis-Praslin account, would have dropped a walnut into melted sugar. This is how the traditional Montargis praline was born. We owe the notoriety of brioche to the pastry chef from Saint-Genis-Sur-Giers who created the famous pink praline brioche, also called Saint-Genix. The praline continued its journey to Lyon, the city where the famous praline tart was created which you still find today in all Lyon corks (name given to the traditional restaurant in Lyon)

In 1991, Hong Kong born Johnny Chin brought to Montreal a mysterious confectionery called Dragon’s Beard Candy, a dessert that used to serve the Emperors of China.
Using corn syrup and cornstarch as its core, the once before hardened block of sugar is turned into 8,192 thin and delicate strands through stretching and doubling. To add a twist of taste, there is a mixture of peanuts, coconuts, sesames and a slight touch of chocolate within the wrapped sugar strands.
